Acidulated or Acid Malt is generally used in very small amounts to lower mash pH, which may improve conversion and help fermentation. Usually an ounce or two is enough for a typical 5 gallon batch. Also known as Sourmalz, or Sour Malt, a larger quantity - up to 10% of the total grain bill - can be used to make sour beers like Berliner Weisse.
